    Apple-Onion Pork Roast

    This recipe is so easy to prepare yet deliciously perfect. You’d surely enjoy the sweet taste of apples along with the honey mustard coating used for the pork roast.

    INGREDIENTS

    * 1 lb pork tenderloin roast
    * 4 tablespoons honey mustard
    * 1 large onion, thinly sliced
    * 2 medium apples, thinly sliced
    * 1/2 cup white wine or apple cider
    * Salt and pepper to taste

    DIRECTIONS

    • Set oven to preheat settings of 425 degrees F.
    • Coat an oven proof skillet with non-stick spray and set over moderate-high heat. Evenly sear the roast and take it off the skillet. Let it cool. Apply mustard over the roast and set it in the roasting pan. Leave it roasting for about 25 minutes.
    • Apply another coating of non-stick spray to skillet and set over moderate heat. Saute the onions and apples for about 5 minutes. Add wine or cider and lower heat settings. Leave it simmering until apples are soft. Season with salt and pepper according to taste.
    • When the roast is done, take it out of the oven and leave it aside for 5 minutes before slicing. Serve with the prepared apple-onion sauce.
    • Makes 4 servings.
