    Baked Chili Verde Pork Wraps

    Enjoying pork recipes may cause hassle to your nutritional table. But this pork wrap recipe is not only low in fat but low in carbs as well.

    INGREDIENTS

    * Pork, cut into cubes
    * Onion, chopped
    * mushrooms
    * olive oil
    * canned green chilis
    * red kidney beans
    * 1/2 can enchilada sauce
    * cooking spray
    * plain non-fat yogurt
    * low-carb tortillas
    * cumin
    * Adobo or Mrs. Dash spice mix.

    DIRECTIONS

    • Set oven to preheat settings of 350 degrees F. Coat a baking pan using cooking spray. Set aside.
    • Heat saucepan with olive oil and saute onions until clear. Add pork and cook until brown. Add mushrooms and green chilis. Add seasoning and continue cooking for about 10 minutes over moderate heat.
    • Meanwhile, add 2 tablespoons of enchilada sauce and cumin to yogurt then reserve for later use.
    • Fill one tortilla with 1/4 of the pork mixture. Fold into a burrito and set into the prepared pan with the seam side facing down. Repeat the same steps for the remaining wraps and pork mixture.
    • Ladle yogurt on top of the wraps and add the enchilada sauce. Place it into the oven to bake at 325 degrees F for about 40 minutes.
    • Makes 4 servings.
