Prepare this hearty meal made of classic macaroni and cheese. Add more twist using tomatoes, onion and a pound of Italian sausage.

INGREDIENTS
1 pound Italian sausage
1 medium onion, chopped
2 medium large tomatoes, cut into small chunks
1 1/2 cups elbow macaroni
2 tablespoons butter
2 tablespoons flour
2 cups milk
1/2 teaspoon salt
Ground pepper to taste
Pinch freshly grated nutmeg
1 cup grated sharp Cheddar cheese
1 cup grated American cheese
1 1/2 cups fresh plain breadcrumbs
3 tablespoons melted butter

DIRECTIONS
- Prepare the oven to 350 degrees F settings.
- Set a skillet over medium heat, frying skillet for 8 minutes. Break the sausages as it cooks. Transfer meat in a bowl, draining excess grease.
- Using the same pan, cook the veggies for about 3 minutes or until soft. Add the tomato and cook for a few seconds. Add the sausage back into the pan and remove from heat.
- Cook macaroni as instructed in the packaging or until al dente. Drain and reserve.
- Meanwhile, heat butter in a saucepan over medium heat. Once melted, reduce heat to low and add the flour. Cook for 2 minutes stirring often using a whisk. Add milk gradually. Stir and cook for about 5 minutes or until the cheese melts. Add this over the cooked macaroni and combine well. Add the sausage mixture and transfer the entire mixture in a casserole dish.
- Mix the breadcrumbs and butter then top over macaroni. Place it into the oven to bake for half hour or until top has turned golden brown.
- Makes 4 servings.
