INGREDIENTS
10-12 chicken wings (2 1/2 lbs.)
1/4 to 3/4 cup hot pepper sauce
1/4 cup butter
Vegetable or peanut oil (for frying)
4 cloves garlic, minced
1 shallot, minced (optional)
1 onion, finely minced (optional)
pinch of sea salt
DIRECTIONS
Pour oil in a heavy bottomed, deep-sided frying pan to an inch. Heat to 400°F.
Prepare the wings, splitting each at the joints and discarding the tips. Rinse and use paper towel to rinse.
Melt butter and add the minced garlic in a small saucepan over low heat. Once garlic if golden in color, mix in the hot sauce and add a pinch of salt.
Cook the wings into the hot oil, deep frying for not more than 12 minutes. Place over paper towels when done to drain. Toss this with hot sauce for an even coating.
