Your traditional sandwich recipe made healthier. No meat!
INGREDIENTS
1/4 cup mayonnaise
3 cloves garlic, minced
1 tablespoon lemon juice
1/8 cup olive oil
1 cup sliced red bell peppers
1 small zucchini, sliced
1 red onion, sliced
1 small yellow squash, sliced
2 (4-x6-inch) focaccia bread pieces, split horizontally
1/2 cup crumbled feta cheese
DIRECTIONS
Combine mayonnaise, minced garlic and lemon juice. Chill until using.
Prepare grill to high heat. Brush the veggies evenly and the grate with olive oil. Arrange the bell peppers and zucchini near the center of the grill. Arrange the onion and squash pieces around them. Leave it cooking for 6 minutes, turning once. Grill peppers longer.
Apply mayonnaise mixture on the cut side of the bread and sprinkle with feta cheese. Set on the grill with the cheese side facing up. Cover and cook for 3 minutes or until the cheese slightly melts.
Remove buns from grill and add layers of vegetables.
