*3 lb loin of pork
*5 slice onion
*3 slice apple, cut in half
*1/4 tsp sage
*1 can cream of chicken soup
*1/4 cup sherry or substitute
*1/2 cup water
DIRECTIONS
Cut the pork loin with 6 slits until it almost reaches the bones. Insert a slice of onion and apple into the slits. Rub the roast with sage and tie well.
Set the roasts into the oven with the fat side facing up at 325 degrees F for about 2 hours. Remove any traces of fat. Blend soup with wine then on top of the meat. Leave it roasting for half hour or until done. Use soup for basting. Take it out of the pan.
Place the roasting pan over the stove top and add water into the soup. Stir often while heating to loosen out the browned bits. Enjoy with roast.
