Join the festivities of the Chinese holidays with this delicious roast recipe.
INGREDIENTS
1 (7.5 oz jar) hoisin sauce
2 tbsp. each honey and rice vinegar
4 scallions, finely chopped
2 lg sweet potatoes, cut into 1/2-strips
1 lb asparagus, trimmed
3 tsp. olive oil
1/4 tsp. salt
1 (1 lb) pork tenderloin
DIRECTIONS
Place the rack in the middle portion of the oven. Set oven to preheat at 500°F.
Prepare 2 rimmed baking pans, lining it with foil and sprayed with cooking spray.
Combine 1/3 cup hoisin sauce, honey, vinegar and scallions in a bowl then set aside.
Put the sweet potatoes on the first baking sheet and place the asparagus on the second one. Toss the ingredients separately with oil, 2 teaspoons for the sweet potatoes and one teaspoon for the asparagus. Sprinkle with salt.
Shove the potatoes onto one side of the pan. Put the pork on the space provided and brush the meat with the remaining Hoisin sauce. Place pan on the top shelf of the oven and roast for about 15 minutes. Take the pan out of the oven and toss the potatoes gently while turning the pork. Put the pan back into the oven and have the pan of asparagus placed on the bottom shelf. Roast for 10 minutes.
Serve pork in slices with the Hoisin sauce and vegetables.
