This is the perfect recipe to try for the summer. Picnics would always be special when served with this dish.
|

INGREDIENTS
1 (14 ounce) package firm tofu
1/4 cup lime juice
1 tablespoon olive oil
5 tablespoons chopped fresh cilantro
2 cloves garlic, minced
2 teaspoons chili powder
1/4 teaspoon cayenne pepper
salt and black pepper to taste

DIRECTIONS
- Put one block of tofu on a plate and top it with another plate. Place a 5 pound weight on top and keep it pressed for half hour, draining any excess liquids.
- Cut the tofu into 4 thick slabs, lengthwise or cubes then thread onto skewers. Arrange on a plate.
- In a bowl, combine lime juice, olive oil, cilantro, garlic, chili powder, cayenne pepper, salt and black pepper. Use marinade to brush the tofu. Cover with plastic wrap and marinate for at least 2 hours, chilled.
- Prepare an outdoor grill over medium heat and grease grate lightly with oil. Grill tofu for about 15 minutes and brush with marinade from time to time.
