Rice topping made of chorizo sausage, shrimp, tomatoes, green onion, basil and garlic.

INGREDIENTS
3 cup water
1 1/2 cups fragrant rice
5 tbsp (1/3 cup) extra virgin olive oil
2 large garlic cloves, minced
2 chorizo sausages, sliced thin
1 lb large shrimp, peeled and deveined
4 thin green onions, sliced in 1-inch pieces
5 large fresh basil leaves, chopped
1 can petite diced tomatoes with juice
Garlic hot sauce to taste, light is better
Salt and pepper to taste

DIRECTIONS
- Pour water in a medium pan and bring to a boil. Add rice and cover pan, lowering heat. Cook for another 20 minutes.
- Meanwhile, heat olive oil in a large pan. Saute the garlic cloves over medium heat. Add chorizo slices and saute for about 7 minutes or until slightly browned. Mix in shrimp and cook until shrimps are almost done.
- Mix the rest of the ingredients with sausage and shrimp. Combine well and cook until the shrimps are done. Cover and set away from heat. Leave it for about 5 minutes before serving over freshly cooked rice. Add garlic Tabasco, if desired.
- Makes 4 servings.
