INGREDIENTS
2 cups fine, dry breadcrumbs, divided
2 cups ground cooked ham
1 cup grated Parmesan cheese
4 eggs, slightly beaten
1 small onion, finely chopped
1/4 cup finely chopped fresh parsley
Vegetable oil
DIRECTIONS
In a large bowl, combine 1-1/2 cups breadcrumbs with all the remaining ingredients. Mesh well before shaping them into balls.
Roll the balls over to a platter with 1/2 cup of breadcrumbs. Refrigerate for 30 minutes.
Meanwhile, heat oil in a deep fryer. When the balls are ready, cook them in batches for about 3 minutes each. Transfer over paper towel-lined plates to drain then serve.
