INGREDIENTS
2 pounds finely ground pork fat
2 pounds finely ground pork
2 onions, finely chopped
4 cups water
1 teaspoon ground cloves
3/4 teaspoon ground nutmeg
salt and black pepper to taste

DIRECTIONS
- In a large pot, combine pork fat, ground pork, onions, water, cloves and nutmeg. Add salt and pepper, cooking until boiling. Adjust heat to medium-low, allowing dish to simmer for about 90 minutes. While cooking, mash pork every 15 minutes, using a potato masher.
- Longer simmering time means better flavor for this dish. Simply add water as needed. Keep the gorton refrigerated overnight. Skim off the fat layer when serving or blend it with the meat for a creamier texture.
- Makes 5 cups
