This is a real twist for your usual pork tenderloin recipe, making it extra delicious with grilled chutney on the side.
|

INGREDIENTS
2 medium peaches
4 teaspoons extra-virgin olive oil, divided
1-1 1/4 pounds pork tenderloin, trimmed of fat
1/4 teaspoon plus 1/8 teaspoon salt, divided
1/4 teaspoon freshly ground pepper
1 teaspoon finely chopped fresh ginger
1 tablespoon light brown sugar
2 tablespoons rice vinegar

DIRECTIONS
- Prepare grill high heat.
- Peel and cut the peaches in hlaf, removing the pits. Apply 2 teaspoons of oil over to each side.
- Use the remaining teaspoons of oil to brush over the pork, then season with 1/4 teaspoon salt and pepper. Grill pork and turn from time to time as it cooks for about 18 minutes.
- Grill peaches, placing the cut side facing down. Turn from time to time as it grills for 8 minutes.
- Place them on a cutting board along with pork onto a cutting board. Allow cooling for the peaches and pork.
- In a medium bowl, stir ginger, brown sugar, vinegar and the remaining 1/8 teaspoon salt. Add the chopped peaches and mix well until combined. Cut pork diagonally into 8 portions. Top with peach chutney and serve.
