Pork chops were deliciously marinated with lemon juice and fresh thyme. It adds the right blend of tang into the dish.
INGREDIENTS
2 boneless pork chops, about 1/2-inch thick
splash of lemon juice
4 sprigs of fresh thyme (or dried thyme)
meat tenderizer, to taste
freshly ground black pepper, to taste
extra virgin olive oil, to cover both sides of the chops
DIRECTIONS
In a small bowl, put the boneless pork chops. Add lemon juice and rub it thoroughly onto the meat. Place the thyme around the two chops and rub the seasoning for better blending. Cover with plastic wrap and marinate for about 12 hours. Rub occasionally with the thyme.
Preheat the electric kitchen grill and place a drip cup below it.
Drain the chops and pat dry using a paper towel. Sprinkle chops evenly with the meat tenderizer. Add some freshly ground black peppercorns and drizzle with extra virgin olive oil.
Grill chops covered for a few minutes. Turn the meat occasionally, grilling closed until done or for about 10 minutes.
