Pasta lovers would surely go gaga over this recipe!
INGREDIENTS
1/4 lb. lean bacon
Salt
1 lb. pasta shells
1/2 of a 10 oz. pkg. frozen, small green peas
1/2 lb. ricotta cheese
1 tbsp. butter
1/3 c. freshly grated Parmesan cheese
Freshly ground pepper
DIRECTIONS
Slice the bacon into thin strips. Cook in a pan until browned. Drain over paper towels. Spoon 2 tablespoons of fat off the pan. Add thawed peas and cook for a minute. Set aside.
Boil 4 quarts of water. Add a tablespoon of salt and the pasta.
Crumble Riccota into a large serving bowl. Add butter and the cooked and drained pasta. Toss for a few times and season with salt.
Heat the peas again and add bacon. Transfer mixture into the bowl of pasta. Toss well and add the Parmesan cheese and some pepper. Toss again and serve.
