I prefer having this recipe prepared for dinner with the family.
INGREDIENTS
4 slices bacon
2 scallions, sliced thin
2 tbsp. unsalted butter, cut into bits
1 c. heavy cream
1/2 c. freshly grated Parmesan
1/2 c. peeled, seed and chopped tomato
1/4 tsp. white pepper
1/8 tsp. nutmeg
1/4 tsp. salt
1/4 lb. cheese filled tortellini, cooked
DIRECTIONS
Cook bacon until crisp. Drain over paper towels. Remove fat from skillet, reserving a tablespoon. Use it for cooking the scallions for a minute. Drain over paper towel.
Cook butter and cream over medium heat for 3 minutes. Stir from time to time. Mix in the Parmesan and crumbled bacon. Add the scallions, tomato, pepper, nutmeg and the salt. Allow it to simmer for a minute before adding the tortellini. Mix and serve.
