Birthdays will never be complete without this delightful recipe served. Kids simply can’t get enough of it.
INGREDIENTS
1/2 lb. thick sliced bacon
2 tbsp. butter
1 c. onion, chopped
1/2 c. sweet red pepper, diced
1 c. sliced fresh mushrooms
1 bouillon cube in 1 cup hot water
Salt and pepper to taste
1 lb. pasta
10 oz. fresh, washed spinach (about 4 c.)
1 c. grated fresh Parmesan cheese
DIRECTIONS
In a skillet, cook bacon until crisp. Remove fat and drain bacon over paper towels.
Using the same skillet, add butter and saute the onions and peppers for about 3 minutes. Add mushrooms and saute for another minute. Set heat to high and mix in broth. Once boiling, reduce heat and simmer for 2 minutes. Season with salt and pepper.
In a large pot with boiling water cook pasta as directed. Drain well and put the pasta back into the pot. Add the vegetable sauce and spinach, tossing over moderate heat.
Distribute among 6 plates and add crumbled bacon and Parmesan cheese on top.
