    Pasta with Spinach, Bacon and Mushrooms

    Birthdays will never be complete without this delightful recipe served. Kids simply can’t get enough of it.

    INGREDIENTS

    1/2 lb. thick sliced bacon
    2 tbsp. butter
    1 c. onion, chopped
    1/2 c. sweet red pepper, diced
    1 c. sliced fresh mushrooms
    1 bouillon cube in 1 cup hot water
    Salt and pepper to taste
    1 lb. pasta
    10 oz. fresh, washed spinach (about 4 c.)
    1 c. grated fresh Parmesan cheese

    DIRECTIONS

    • In a skillet, cook bacon until crisp. Remove fat and drain bacon over paper towels.
    • Using the same skillet, add butter and saute the onions and peppers for about 3 minutes. Add mushrooms and saute for another minute. Set heat to high and mix in broth. Once boiling, reduce heat and simmer for 2 minutes. Season with salt and pepper.
    • In a large pot with boiling water cook pasta as directed. Drain well and put the pasta back into the pot. Add the vegetable sauce and spinach, tossing over moderate heat.
    • Distribute among 6 plates and add crumbled bacon and Parmesan cheese on top.
