An easy pork roast recipe that presents a delicious cranberry taste.
INGREDIENTS
1 boneless rolled pork loin roast (2-1/2 to 3 pounds)
1 can jellied cranberry sauce (16 oz.)
1 tsp. dry mustard
1/4 tsp. ground cloves
1/2 cup sugar
1/2 cup cranberry juice
2 tbsp. cornstarch
2 tbsp. cold water
salt, to taste
DIRECTIONS
Put the roast in a slow cooker.
Mash the cranberry sauce in a medium bowl and blend it with sugar, cranberry juice, mustard and cloves. Add mixture onto the slow cooker and cover the pot. Set heat to low and cook for about 8 hours or just until the meat becomes tender.
Take the roast off the cooker and keep warm. Remove the fat from the juices and measure about 2 cups. Add water as needed then put this into a saucepan. Cook until boiling with heat set at medium-high.
Blend the cornstarch with cold water until the mixture is paste-like in consistency. Mix this with the gravy and cook until thick, stirring often. Add salt to taste and serve with the sliced pork roast.
