A good cook is the peculiar gift of the gods. He must be a perfect creature from the brain to the palate, from the palate to the finger's end.

This is one of the best recipes I’ve ever tried. Serve with your favorite vegetables on the side for a balanced and nutritional meal.

    INGREDIENTS

    1 bone-in pork loin (2.5 lbs – 5 lbs)
    garlic cloves, slightly pressed
    1 cup flour
1/2 cup Tones Canadian Steak Seasoning
    1/4 cup Durkee Steak Dust
    1/4 cup Durkee Grill Seasoning
    couple grinds of fresh pepper
    olive oil

    DIRECTIONS

    • Arrange the oven rack below the middle portion of the oven. Heat the oven to 500°F.
    • Rinse roast with cold water and pat dry with paper towels. Make half-inch piercing around the roast and press in garlic cloves slightly. Brush entirely with olive oil when done.
    • Put all the remaining ingredients in a large resealable plastic bag. Combine well before adding the roast. Shake to cover the roast well, pressing the seasonings against the meat.
    • Put a cover of foil on a shallow baking pan and place a rack inside the pan. Place the roast onto the rack, keeping the fat side facing up. Roast for about 20 minutes at 500°F. Adjust the heat settings to 250°F when done and cook for another 90 minutes or until a meat thermometer reads 160°F. Take the roast out of the oven and let it rest for 20 minutes prior to carving.
