* 4 lean pork chops
* wholegrain mustard
* 1/2 cup (90 g) Demerara (raw) sugar
* 2 small oranges
DIRECTIONS
Preheat oven to 400 degrees F. Remove excess fat off the chops. Apply mustard over each side.
Scatter sugar on a plate and roll the chops over it until properly coated. Set over a greased shallow overn-proof dish.
Remove orange peel, holding them over a bowl to catch any juices. Divide the orange into segments and discard the pips and pith. Set the orange segments over the chops and add all the juices.
Place it in the oven, uncovered and bake for about 35 minutes or until tender. Baste from time to time.
